View Full Version : Pumpkin Muffins

I thought I had already posted this recipe here, but I quickly looked through the pages here in the recipe section and didn't see it. 'Tis the season, so I'll put it up (again).

Ingredients:
1 box Spice cake mix
1 can (15oz) pumpkin
4 TBS water

Preheat oven to 350*.

Mix all ingredients together in a bowl. Lump about a heaping spoonful of the mixture into pre-greased muffin tins (this can make 12 HUGE muffins or 18 'bite' sized ones).

Bake @ 350* for 25min.

Take out of oven & cool for a few minutes before transferring to cooling rack.

These things are awesome. I've already made about 6 batches of them for various playdates & gatherings and am working on 2 more now for this afternoon. i'm also making these as a 'snack' for Ian's soccer team after practice on Saturday.

As I said, they taste great and are budget friendly and incredibly easy to make.

Do you use just the dry mix, or make the mix as it says on the box and add pumpkin?

Sackedsahd: By all means, go ahead! I got it from my SIL who I believe got it from someone in her weight watchers meeting a few years ago....so not sure who to credit.

Guy: Just use the dry mix, pumpkin and water.

we do the same thing with red velvet cake mix and pulped strawberries for halloween parties we call em bloody hearts

Just thought I'd add this one here, instead of starting a new thread.

Just made these (http://allrecipes.com/recipe/banana-crumb-muffins/detail.aspx) this morning. Easy to make and the kids love 'em. So do I.
