Ingredients:
2 lbs lean ground beef
1 Cup breadcrumbs
3/4 cup diced onion (1 small)
1/2 cup diced red pepper (1/2 pepper)
1/2 cup frozen corn,thawed
1/2 cup milk
1 egg
1 clove garlic, minced
2tsp salt
1 1/2 tsp chili powder
1 tsp ground cumin
1/4 tsp pepper
1/2 cup thick and chunky salsa
method:
Oven 350 deg
mix everything,except the salsa. Shape into a loaf and bake 1 hr and 20 minutes. Temp out at 160 deg.
Let cool for 10 minutes,top with salsa slice and eat.
For finicky kids, can put salsa in bowl and spread on slice as desired.

I had leftovers for two lunches and loved it.(meatloaf cheese sandwich)
Wife wants it on next weeks menu (2 weeks in a row is unheard of)

Please say you used Rye Bread. My favorite with meatloaf sandwiches!

Nope. Would be good. We compromised on "integral blanco" by Holsum out of Puerto Rico. Gotta give a little,and "meat" in the middle sometimes.:chugchug:
