Got this from the most recent issue of Backpacker magazine. It looked so damn easy, I gave it a go at home -- rather than heading out on a trail to try it :dumb:.
Sure enough, it's quick, easy and awesome. Gonna make more for tomorrow, which is our monthly gathering with our former neighbors.
Ingredients:
3 cups plain instant oatmeal
1/4 cup butter
2 TBS Cocoa (i just used hot chocolate mix)
1 2/3 cup sugar (I cut this back since I used HC mix)
1/2 cup milk (can be powdered, for hiking)
2/3 cup creamy peanut butter
1 TSP Vanilla extract
Waxed paper
*Combine butter, sugar, cocoa and milk (plus water if using powdered milk) in a pot. Bring to a boil at medium-high heat, stirring gently every minute or so to mix. Remove from heat.
*Stir in peanut butter, then vanilla, then oatmeal.
*Drop mixture by the spoonful onto waxed paper, let cool (put in fridge to let them firm up).
~makes about 24 "cookies". They look like hell but really taste awesome.

I'm making a batch of oatmeal cookies today. Maybe I'll give this recipe a test and see how it does with regular rolled oats.

Yeah I'm trying to decide between cookies (oatmeal, PB or CC) or a lemon pie. I'm leaning to pie. Maybe pie and cookies. Mmmm..

I'm making the choco oat cookies right now. Hock, if you want tontry a good oatmeal cookie check my Goid Eats blog, should be the first post or two. Uses flour made by running rolled oats through the food processor.

That sounds neat. Are they killer good? I am doing a pie shell right now in the oven, then I'll make the filling, let it cook, then make the topping. No cookies today. Won't have the time. WEll maybe I would, but don't have the drive. LOL.

So the kitchen is no different than the golf course? Oh snap! Well, at least that's what Clowe said.

Oh no. That's where you're wrong. I got it. Well sort of. I've figured out a swing that works and oh my God it's long. Bombs!!! Last round I played was a league championship. One of the Par 4s I pretty near hit it. In cooler weather none the less. IT was a bomb. Would have had the distance easy in warm weather. And it was a slight cut shot none the less (doesn't go as far as straight/draw). The group in front was just getting off the green when we pulled up. One of them pulled a machete and chased me (all in fun) as it landed next to their carts. Seriously he did. No idea why he had that in his bag....LOL. Find missing balls I suspect.
It's still a beast that needs to be controlled, but it's a much better swing than before when I had just totally changed my swing and hadn't figured out the driver. (AND WAS USING CLubS I'VE NEVER SEEN BEFORE!!!) Now I have all the pieces. Just need to put it all together. Come get some.

Mmmmmmmm cow chips yummy! I had some dark choco cocoa and discovered a barrel of 1 minute oats in the cupboard. Reminded me that my mom used to make something very similar to this recipe (sans coco) from the back of the Quaker barrel.

I just made these but added a few choco chips. Batter was yummy, we'll see how they taste in a few hours.

Let us know if they are a must make. I've never trusted Don (CT) before. Maybe this will sway me. My lemon pie looks good I must say. Having turkey soup for dinner.

My shadiness runs deep...and that's coming from ME! lol. Thanks for the vote of confidence (but I wouldn't trust me either).

The cow chips are decent. Not great but not bad either :)

Thought they were pretty good, could prolly cut the sugar down a bit. Coconut would be a good addition and maybe more peanut butter.

I dunno, I think they're great for what they are: Globs of goodness from minimal effort.
I agree about the sugar...like I said, I cut it down some because I was using hot chocolate mix, but I'd cut it down even more...down to well under a cup.
Coconut....hmmmm, sounds promising!

They're usually called No Bake cookies, BTW.
I was thinking about making some tomorrow with the 2 year old. He stopped eating Jello because he turns into a Jello Making zombie when he sees it.
My mom made those every few months growing up. Simple with easy to find ingredients. What's not to like? We had Haystacks, too. I think those were chop suey crunchy noodles held together with honey and peanut butter. Ok, so it was butterscotch chips... (http://www.ehow.com/how_2141003_make-haystack-cookies.html)

Made them yesterday to distract the toddler out of a tantrum. We only had Hershey Special Dark chocolate powder in the kitchen, so they were a bit richer than normal.

The last batch I made I eyeballed the ingredients rather than measuring and they didn't come out quite as good....you really gotta get the right proportions.
Glad you liked them Neo....yeah, never said they were good for you, just quick and easy!
