View Full Version : Ugly Alfredo Sauce

Found this on All Recipes and made it last night. I call it Ugly because before you add it to the hot noodles it looks, well, ugly. Downright NASTY. Good thing is, it tastes good and comes together very quickly.
Add a little cracked pepper mmmm

INGREDIENTS:
1/2 cup butter, room temperature
3/4 cup grated Parmesan cheese
1 cup heavy cream
cracked fresh pepper

In a medium bowl, beat butter and Parmesan with an electric mixer until fluffy. Add cream, a little at a time, until mixture resembles softly scrambled eggs. Toss with hot pasta to serve.

We had it with spaghetti, grilled chicken and veggies.

Well as long as it tastes good, presentation isn't everything. Rather it be ugly and delicious then pretty and horrid.

I worked in a restuarant that made their alfado basiclly the same way but instead of cream they used sour cream and garlic. it's really good and easy.

It was delicious :)

What I did is I baked some chicken breasts in the oven with seasoning on it (The seasoning consisted of 1 TBS salt, 1 tsp pepper, half tsp onion pwdr, half tsp garlic pwdr, half tsp basil leaves, half tsp oregano leaves, quarter tsp Marjoram, and a pinch of Coriander seed all mixed with about a quarter cup of Olive oil made into a "paste")

Baked 400 degrees for 35 minutes. I then cut up the chicken into small pieces and added it and cooked broccoli to your sauce.

Very good!

Pulled this one out my hat!!
This is a delicious chicken pasta recipe.
here's what I did.

Boiled 3 frozen chicken breasts (this removes all the fat as well as cooks the breast without drying)(the only problem is you don't get the crispy brown that you get with other methods)

in a pan I put one can diced tomatoes, 1/4 cup cheap red wine, pinch dried onion flakes, pinch oregono, pinch of basil, 3 TBL olive oil. Brought to a boil and reduced to medium to simmer until reduced and thicken.

In the meantime I boiled some spinach fettuccinni which I drained until ready to use.

when the sauce started to thicken I put the chicken in (diced) and some zuccinni chopped. continued to reduce.

When sauce was almost completely reduced I tossed with pasta (in same pan) and added shreded parm cheese and sliced black olives.

served with steamed green beans and garlic bread.

the wife and daughter loved it.

the chicken was tender and had absorbed the flavor of the sauce.

the pasta had finished cooking in the pan and had also absorbed the flavor and melded with the with the cheese to make a quit complex flavor. The zuccinni had cooked but was still al dente. Just perfect.

the color of the dish was in my opinion very nice. the green pasta with the white zuccinni, the pail chicken and the black olives went well with the red of the sauce. It looked good on the plate.

all in all considering that most things came out of my pantry the taste was fresh (do to the zucc i think )

this recipe took less than 40 minutes from start to finish so it makes a great weekday meal but it would work very fine for guests. Just add a salad and some fresh bread and all watch them ooohhhh and aaahhhh :D

I tried the ugly alfredo and as promised it was ugly and very good. I have to admit I was abit suspicious at first as it seemed to easy, I was happily surprised. :) I did add a few things though, I used jmonkeys broccoli addition and also sauteed some mushrooms in white wine/butter/garlic, then added mushrooms and sautee sauce to it (about 1/2 cup).

chef dave, I would try yours as it looks good, but the wife doesn't like olives, tomatoes, onions et cetera et cetera
:roll: she's a pain to cook for....
