In light of valentines day I'm posting this most delicious goodies you and the kids can make for mom, I've never meet a woman who could resist these!
what you'll need:
1lb chocolate chips (I use the toll house ones but the store brand works as well)
1lb fresh strawberries with leaves on (the bigger the better but small works fine too and will save $$)
Wax paper (get a roll at the store it will last you forever)
toothpicks (large)

you need to melt the chocolate chips, there are several methods that work,
a double boiler is great, find to pots that fit inside each other, boil water in the large one and put chocolate chips in the smaller one, placing the smaller one in the larger one, be careful not to put to much water in the bottom one.


another method is the microwave, be careful not to set the microwave to full power, the defrost cycle works well, keep checking it and stirring the chocolate untill fully melted,

the third method is a crock pot, I make about 5lbs of these at a time so this method works best for me.

No worries about overheating the chocolate, it's pretty hard to mess it up.

While the chips are melting layout the wax-paper, leave yourself lots of covered area, it makes cleanup a lot easier! I also get a cookie sheet and cover that too to put the berries on, this way you can set them in the refrigerator easily for the chocolate to set up quickly.
rinse the strawberries trying not to remove the leaves, than take a paper towel and get the berries as dry as possible (chocolate wont stick to a wet Berrie)
Take the large toothpicks and put one in the top of each Berrie, these will act as handles for dipping, don't try to use the leaves as handles or you will be picking strawberries out of hot chocolate!
Ok chips are melted,wax paper is down, strawberries are prepped, now the fun part, dip the berries one at a time untill they are covered about 3/4 of the way up the Berrie, you can dip them all the way but a red crown looks really cool, once you dip them give them a little shake, this gets off and over dip and sets the chocolate into the pours of the berries. then turn the berries upside down real quick to set the tail. Than onto the wax paper. I find about 10-15 minutes in the refrigerator will harden up the chocolate very nicely.Remove tooth picks and try not to eat them all before Mom gets home from work.(I always anticipate this and make a few extras)And of course keep in mind your dealing with HOT chocolate here, little hands seem to get the idea they can be dipped and licked in this stuff so keep a good eye on them!
Ok thats the basics, if your feeling fancy, also get a bag of white chocolate, you can double dip into the white chocolate after the first coat cools some, or take a toothpick and just drizzle the white over the first coat, or I've even make the tuxedos you see below, my son has a blast with these, he will take the white chocolate and put M for mommy on some of them, the sky's the limit, and there is no wrong way to do this, there is a large variety of chips available so experiment with different chocolates,Carmel's, they all work well, they don't all have to be the same and the "home made" look just makes them all the more special to mom! This is also a great birthday gift! It's best to make them the day you need them but they will hold in the refrigurator for a few days (I've never seen them last that long thou :) )

The strawberries are bought! The chocolate is bought!

I briefed the kid on the 'project' tonight and we're a 'go' for tomorrow!

We'll probably get an early dismissal with the impending 1" of snow coming our way. So tomorrow afternoon evinces the best opportunity for success.

Here's a little tip - add a tsp of vegetable shortening for every cup of chocolate.

It makes it melt a lot easier and you'll get a softer consistency for dipping.

HOLY &*%! There's chocolate everywhere! When you said crockpot I figured I needed a LOT of chocolate. Whoever made those tuxedo things was insane, we did the white and brown, looks more like snow leopard that got caught in a snowblower. We have chocolate covered strawberries, apples, bananas, faces, even a pickle! There was STILL chocolate left. OK, gotta go.........:shock:

And yup - it can get MESSY!

But it was fun. And the wifey loved it!

I couldn't get the stuff to melt! I did the double burner thing starting out. It melted a little and stopped. I put some in the microwave and it cracked the bowl. Had to toss that. Tried it directly over the burner, worked ok, but ya got to be real careful it doesn't get away from you. (It did - pot's still soaking).

I found that vegetable shortening tip on the bag. Worked like a charm.

well guy's I'm not sure what to say, I ussually have not to many problems with them, in-fact I'm trying chocolate bowls to put the strawberries in this year, made the bowls today I'll post some picks tomorrow, yes the tuxedos are a lot of very patient work I've made them many times, I worked as a cook for many years and learned to make this stuff many years ago, I've done weddings where you make 250 of those tuxes and boy it takes forever!
The secret is letting your chocolate cool enough to get really hard before attempting the second coat or trying to do design work.
Jeff I'm not sure why your chocolate wouldn't melt??? Strange, it's not a fast process thats for sure, and when microwaving defrost cycle or a melting cycle is best but once again it takes a while. I ussually get the battle area covered with wax paper,chocolate melted and strawberries prepped before letting the kids get involved that way they dint have to wait, waiting is truly hard for the kids.
Yes a mess will happen, hence in my post the cover area with wax paper! I use the crook pot because I make a lot of strawberries no less than five pounds every year and need about five bounds of chocolate so the crock pot works well for me. I just hope you guy's are not turned off from doing it again, it is easier as you do it a few times, and yes thats a good tip Jeff with the oil, I don't do it being I didn't learn that way but I have read it works well.
I'll post pics of mine tomorrow for you guys

I might try that suggestion of putting shortening to help melt the chocolate. I always have trouble melting chocolate! And I've tried everything; double boiler, microwave, etc.. Maybe I'm just not being patient enough.

I bought Hersheys morsels. Regular chocolate, not the bittersweet morsels for chips. They look the same.

My only guess is that they don't add the oil during manufacturing so the nuggets won't turn into a gooey mess when you cook with them.

That shortening made them melt asap! I spent an hour and half trying everything to get those suckers to melt. After the shortening - poof!

I'd definitely try it again.

Not even close! It was a blast, the kids loved it. :wtg: I probably sounded stressed in that last post, not though, I was chuckling the whole way. We didn't really attempt the tuxes, just made me respect the skill and artistry of it, trying to smear some patterns on there. Just double dipping worked great. No melting problems here, did the double boiler and crock.

We're waiting till tomorrow, my wife was cracking up, because we tried so hard to clean any remnant before she got home, first thing she smelled coming in was chocolate. The boys did great not letting in on the secret, we were all laughing, as she guessed this and that, and they said "what chocolate?"

Well gave a try at making chocolate bowls to put my strawberries in today, eat the berries than the bowl!=P~
Pretty simple, blow up a balloon, dip it in chocolate, let it harden, pop balloon remove it, left with chocolate bowl! Well it sounds easy, the balloon will stick to the chocolate a little, not a big deal but if you only dip it once the chocolate is to thin and brakes pretty easy, so back to the drawing board, I tried dipping three time, gave me a nice think bowl, even dipped in white and dark, came out nice! Made a total of eight bowls worth.

LOL, ya I make lots of these, daughter gets some, some off to school for teacher, dropped some off for the secratery's at the school, no one ever gives them anything and we all know they run the school, MIL gets some, little girl down the street gets some:heart: and a few others so we really don't keep much here and my wife don't share her berries with nobody! LOL

we made em, the shortening tip does help quite a bit I think, we did the white without and the milk choc with, the tuxedo's turned out okay, but far from great, and the bowl idea is pretty cool, we tried it as well but were pressed for time so it's a small bowl, Jilly's strawberries the chocolate isn't set yet as she loaded em :lol:

Ahh the hell with it. I just got back from buying some strawberries and chocolate!!! I bought a big chunk of chocolate so that we'll have some extra to use when we make our V-day tradition of fondue (which includes chocolate fondue for dessert).

I'm just doing the milk chocolate and strawberries, nothing extra like the tuxedos. This is the first time I've ever made them so we'll keep 'em simple.
