Banana Muffins
2 - 3 pc of very ripe bananas
2 cups self raising flour
1 cup sugar
1 egg
1/2 teaspoon vanilla essence
1 cup of milk or water
150g melted butter
Method:
Mash bananas with fork in a bowl. add flour into the mixture. I use
the hand beater, add sugar and egg , butter, vanilla essence, slowly
add your milk or water gradually to keep the air in the mixture.
Wipe some oil or butter on the baking dish to prevent sticking.
Pour mixture into muffin baking dish, bake for about 15 - 20 in a
preheated oven about 150 to 200 degrees.
there you go very simple even the wife love's it.
Hint:
make sure you use very ripe bananas as they make the mixture smell great
and the natural sugar in them works best.
for the sugar consious 1/2 cup of sugar is ok.
