View Full Version : Get your kids to eat spinach!

Now, I love spinach and every vegetable except beets (reminds me of a mouthful of potting soil), but it is likely your kids will shun the green stuff. Try this super-easy dip with some of their favorite crackers ( I love it with Stacy's pita chips or tortilla chips):

Cheesy Spinach Dip

1 box frozen, chopped spinach (not the cut leaf, it will be too stringy for this dip and will tip the kids off)
1 cup of shredded smoked cheddar (if you don't like smokey foods, you can use regular cheddar. The smoked cheddar disguises teh spinach better)
1/4 cup milk

Preheat oven to 350***. Cook spinach until thawed. Strain/squeeze out excess liquid. In a bowl, mix together spinach, cheese and milk. Transfer to an oven-safe baking dish. Bake at 350 for 5-10 minutes or until bubbly. Let cool sufficiently so the kiddies don't burn their mouths and allow the dip to thicken(about 5-10 minutes). Dip away.

*** this is great for a party too - just double the recipe. You can make the mixture ahead of time and bake it just before the guests arive. Makes a great game-day dip too!
