Lamb loin roast
I used a recipe that Jamie Oliver put in his book for a shoulder, but had the loin thawed.
1 head garlic Handful of fresh rosemary Lamb Loin Roast Olive oil Salt and Pepper Crank the oven all the way up. Separate a head of garlic, removing paper. Lay half of the garlic and half the rosemary in the bottom of a roasting pan. Score the fat side of the roast. Rub the lamb with olive oil and then apply salt and pepper. Lay the roast, fat side down, on top of the garlic and rosemary. Top with remaining garlic and rosemary. Put into the hot oven and lower temperature to 325. Bake for 4 hours. Remove from pan to rest for a few minutes before pulling apart with a fork. Make a sauce with the drippings. Very good. Especially with fresh lamb. |
