Won't find that in Parents magazine Sounds good to me though! Heck, I had tater tots and scrambled eggs for breakfast this morning.

I have made that a few times before.

I like to use a 90% lean ground beef and fat free cream of mushroom soup. Cuts down on the artery clogging fat a lot. I also use 2% cheese slices instead of the cheddar for the same reason.

sounds just like my green bean casserole, i bet it taste a hell of alote better without the green beans lol me and the kids will try it

Heck, you could even sneak in some extra veggies in there. Diced peppers, corn, etc.

I have a great cornbread casserole recipe from a Southern cookbook that is pretty similar.

Box of Jiffy cornbread mix (follow directions on box) plus 1 can of cream corn mixed together.

For the other layer you can use ground beef, or whatever filling; just cook it beforehand.

I usually put down a layer of the cornbread mixture, then some cooked ground beef and sauteed peppers and onions, then a second layer of cornbread mix.

Pop it in the oven at 250 for 30 minutes r so until the cornbread is done.
