Now I am really hungry.

That looks like a great recipe though. I had one I used for chicken enchiladas once, but it came out as just sort of okay. I'll have to try this one out as I had been trying to come up with something fun to make this weekend.

Sounds tasty. My wife makes a mean chicken enchilada that everyone will eat. No small feat in this house.

yeah my wife does the enchiladas too. Sounds really similar to that. But she uses some cinnamon in there somewhere. Its really good.

I made some enchiladas the other night using a different method. Used thighs instead of breast and made my own enchilada sauce with chili powder, cumin, sugar,salt, garlic powder, a cold water slurry and chicken stock from when I boiled the chicken. Tried my hand at making my own tortillas also. Got the hang of it by the end, but they ended up coming out better than expected. I like the idea of the cream of chicken though. I'll try that next time to see how it comes out.

I use a salsa and sour cream mixture instead of the canned soup for the sauce; little bit of a different taste. I'll have to try boiling/shredding the chicken next time and see how it goes.
