Default Texas Caviar

This stuff rocks, and is perfect for potlucks, football parties or for just stuffing your face while you're sitting at home alone in the dark:

Boil, then cool:
1/2 cup white vinegar
1/4 cup oil
1/2 cup sugar

Drain, then rinse:
1 can white corn
1 can black eyed peas
1 can black beans

Dice:
1/2 sweet red onion
1 green pepper
1 red pepper


Mix all together and chill in fridge. (putting it in a metal bowl helps it cool faster).



Serve with chips (scoops are great for this).

I was expecting something else when I saw the title of this....not sure what. Definitely something else though with all the licking the fish taco talk.

what, you guys don't trust me????

The kicker for this is the wet mixture (vinegar, oil and sugar). You pour it over all the other stuff and let it chill. Oh man, it really is good. It's great to eat as a bean salad kind of thing too, when you run out of chips.

This sounds pretty tasty and good for a Fall tailgate. Will have to give it a try sometime. Thanks for sharing.
