Default Pumpkin muffins

This is one of my kid's favorites. Tastes kinda like carrot cake and it's hard to screw up, even for a non-baker like myself.
Makes about 2 dozen.

3 1/3 cup flour
2 tsp baking soda
3 cup sugar (I usually go with 2 1/4 - 2 1/2. you could probably use even less if you wanted)
1 1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1/4 tsp ground ginger

Mix the dry stuff and add:

1 cup oil (the veggie kind)
4 eggs
2/3 cup water
15 oz can of smashed pumpkin

Preheat oven to 350

Grease muffin tins with oil or butter and dust with flour.

Fill the tins about 3/4 full and bake for 20-30 minutes. Test 'em with a toothpick to be sure they're done.

I don't want to steal your thunder, so I'll start off by saying that there's nothing like making something from scratch!

NOW, with that said. A SUPER easy recipe for 'em is

1 box of 'spice' cake mix
1 can of pumpkin
4 tablespoons of water.

Mix all together in a bowl and spoon into muffin tins (either grease the pan or use paper cup liners). Bake @ 350deg for 25 min. Yummy!!!!!

I got this from my SIL, and apparently it's a Weight Watchers recipe. She spoons them into 18 muffins. They're tiny, so you can really pop the whole thing into your mouth and barely chew it. I usually make them a little bigger and get 14-16 out of the above ingredients.

I always keep 2 boxes of spice cake mix in the pantry and 2 cans of pumpkin, so I can quickly churn out a batch or two of these if needed. Again, I"m not a baker either, so this is a big feat for me!

This thread reminds me, I have to get some pumpkins from the garden for my dad, TONIGHT, aint' doing it at 3am when I hit the road.

This sounded so damn good, maybe with a cup of coffee on a cold morning....I stopped off at the Lil Peach and picked up a can 'o punkin and borrowed some sugar I forgot to get at the grocery store from the bachelors next door....it's baking now and I can't wait....this makes a pretty BIG batch of muffins!! I think it's more like 3 dozen.
Can you tell the Pats have a bye week? :D
