Default Albondigas AKA Mexican meatball soup

Albondigas Soup A.K.A. Mexican Meatball Soup
A.K.A. cure for the common cold (or hangover)

2 eggs, beaten
2 “¼” cups of finely chopped fresh cilantro
Salt to taste
Fresh ground pepper to taste
¼ tsp dried oregano
2 lbs of extra lean ground beef or ground turkey
¼ cup of uncooked white rice
2 tbsp of vegetable oil
1 medium onion, chopped
2 garlic cloves, minced
4 cups of water
2 “15” oz cans of beef broth (I use 4 bullion cubes and 4 cups of water)
2 “15” oz cans of tomato sauce
2 cups of sliced carrots
2 cups of chopped celery
2 tbsp of chili powder
1 gallon zip lock bag

Heat oil in a large pot on medium high until hot. Sauté carrots and celery. Add onions and garlic and sauté until onions are tender but not brown. Stir in water, broth and tomato sauce and bring to a boil. Turn heat down to medium and add salt, pepper, oregano,
¼ cup of cilantro and chili powder.

In the zip lock bag combine 2 beaten eggs, ¼ cup of cilantro, ¼ cup of rice 2 lbs of beef or turkey. Mix well. Use a tbsp to make meatballs. As you make the meatballs drop in soup. Simmer for about 30 minutes or until meatballs are no longer pink in the middle.

After all of this is done, enjoy with family and friends.
