Default What to do with eggs?

We have 6 dozen eggs in the refrigerator. I'll probably make an egg bake on Saturday that will eat up 8 of them, but that leaves 5 1/3 dozen.

Any ideas on what I can do with these? They're fresh from our CSA, so they have at least four weeks of freshness remaining. The oldest is from 6 weeks ago.

-Egg salad sandwiches
-Scrambled eggs, and invite the neighbors over for brunch
-Just give them away?
-I think cassat (sp?) takes a whole dozen

French toast!

My brother has a recipe for an awesome breakfast casserole that uses a dozen eggs or so. I'll try to get it.

Frittata
Spanish "tortilla" tapas
-There are two senses of the word Tortilla. The Mexican sense is a flatbread. The Spanish sense of the word is an egg dish very similar to a Frittata.

Call the local shelter or food bank?

You can make quiche and freeze them.

Thought about the food bank angle, but the banks around here aren't sophisticated enough to handle them. I drop off vegetables, but they sit out until someone takes them. I'm not sure if they have a policy for fragile produce.

I'm looking up recipes for pickling them. Then I can let my wife take the responsibility of consuming them. She keeps saying that if I boil them, she'll eat them but she forgets that they're there and asks me what they are.

Egg your local politician's house.

Quiche and fritata are good for breakfast/lunch/dinner and you can put whatever other ingredients in there. Like QV said, freeze 'em.

'Toad in the hole' fried eggs might be a fun dish for the kids:

And Dutch baby is one of my favorite egg dishes:

I'd forgotten about the Dutch Baby. I'll have to give that a shot. It looks.... nutritious. Do you eat it straight up? It looks like it would be good with yogurt.
