Default Poached Eggs in Tomato Sauce with Chickpeas and Feta

From Bon Appetit, Dec. 2011
Popular in Israel, this shakshuka works for breakfast, lunch, or dinner.


FYI, I made it without the jalapeños as my wife doesn't like them...it still came out great. Picture and recipe can be found HERE

Ingredients
•1/4 cup olive oil
•1 medium onion, finely chopped
•4 garlic cloves, coarsely chopped
•2 jalapeños, seeded, finely chopped
•1 15-ounce can chickpeas, drained
•2 teaspoons Hungarian sweet paprika
•1 teaspoon ground cumin
•1 28-ounce can whole peeled tomatoes, crushed by hand, juices reserved
•Kosher salt and freshly ground black pepper
•1 cup coarsely crumbled feta
•8 large eggs
•1 tablespoon chopped flat-leaf parsley
•1 tablespoon chopped fresh cilantro
•Warm pita bread

Preparation
•Preheat oven to 425°. Heat oil in a large ovenproof skillet over medium-high heat. Add onion, garlic, and jalapeños; cook, stirring occasionally, until onion is soft, about 8 minutes. Add chickpeas, paprika, and cumin and cook for 2 minutes longer.
•Add crushed tomatoes and their juices. Bring to a boil, reduce heat to medium-low, and simmer, stirring occasionally, until sauce thickens slightly, about 15 minutes. Season to taste with salt and pepper. Sprinkle feta evenly over sauce. Crack eggs one at a time and place over sauce, spacing evenly apart. Transfer skillet to oven and bake until whites are just set but yolks are still runny, 5–8 minutes. Garnish with parsley and cilantro. Serve with pita for dipping.

That shuckshukkkkkka looks like something alright. but strangely it does look good. I want some. so you dip with the pita? Even the eggs? Interesting. The jalapeños are a must though. Yum.

Ick. I can only eat eggs that are uniformly yellow in color (omellete, scrambled). That white shit and yolky glob are nasty.

I do like the looks of that beef tenderloin with that crust. My mom makes this massive beef tenderloin for xmas every year. A tradition fit for a king!

You actually like that beef tenderloin crust idea CF? Yuck. Caesar? Really? No thanks. Give me a nice dry rub and a good sear any day. Even salt and pepper. Awesome. The rib roast sounds good. Not sure about the stuffing, but I do love some rib roast.

I gross myself out about eggs sometimes by over-thinking what it is, then I can't eat eggs for a week or two

Dont worry, HF, no one expects you to class it up any. Just keep doing your thing man.

Electric, I just might have to try that! I love pork tenderloin, one of my favorite cuts of meat. I've been thinking about a holiday dish to make since we'll be home xmas eve. I think I may have found it.

Adding Caesar is far from classy. I've never been to a nice place that had anything close to that. Then again I don't live in lame Chicago where the micro brews suck and there is no culture.
