Default turkey methods?

Any good secrets to baking (not frying) a turkey? I've not made one in a few years and I'm doing it for my kids and brother this year. I think I did a brine bag awhile back, soaking it overnight, and it was good. I was wondering what other ideas are out there.

We brine then either smoke or bake it. When we bake it I keep it covered until it's nearly done then let it brown. Brining greatly reduces the bake time, too. It's helpful to have a thermometer on hand.
We've also done breast down to keep the white meat juicier. Never done stuffing inside, it creaps me out too much.

We do stuffing. Hit it with salt, pepper and butter and then bake covered the first part and then uncovered for last 1.5 to 2 hours. BASTE after first hour and then every half hour until done. Always juicy and turkilicious.

My stuffing rules. Let me know if you want a recipe and I'll post it. I do mine like Tony does.

If you bake it with stuffing, make sure you check the temperature of the stuffing so it's not just full of undercooked turkey juice goodness.

I seem to recall Alton doing an episode about that El, didn't he? He basically said don't do it, right? Either the turkey gets done tender and juicy and the stuffing is dangerous or the stuffing gets cooked through and the turkey gets dry. Something like that.

Silvio, do not listen to these Nudnicks. Do as I do. Go to Thanksgiving dinner at someone else's house. Eat, fart and leave!!

BTW I was watching a Rachel Ray show the other day and they said repeated basting is a big no no. That surprised me.
