Default Crazy cake (No egg, no milk)

mix dry:
3 C. flour
2 C. sugar
1/2C. cocoa
2 tsp baking soda
1 tsp salt

wet:
2 C. cold water
1 tsp vanilla extract
3/4 C. cooking oil

oven at 350, greased and floured pan
mix dry, stir in wet until smooth, add:

2 TBSP vinegar
quickly mix thoroughly and pour into pan.

Bake 30-40 mins until toothpick comes out clean.

Notes:
This one is pretty easy to dry out so keep a watch on it as the time ends, it'll go from gooey to done in 5 minutes.

Modifications are really easy too, do lemon jello instead of cocao, lemon juice and zest instead of vanilla. My wife has done pie spices, mint extract, orange etc etc. Her next batch will be with crushed candy canes.

When our kids are invited to birthday parties we have to bring along cupcakes for them so they can have cake with the other kids.

Thanks man. I may give this a shot tonight because the little guy needs a snack to celebrate someone's birthday at school tomorrow. It's either this or the eggless oatmeal cookies. hmmmmmmmmm

Thanks, man. I'll have to pass this along to my wife for the next time we have our nieces over. Our older niece is allergic to eggs. I wonder if there's a workable substitute for sugar though. 2 whole freaking cups is a lot IMO.
