Default Baked Chicken Tenders

i was interested in trying a new recipe to make a breaded chicken tender that did not require frying. I saw a recipe somewhere and proceeded to try it. I have to admit it wasn't bad at all so I figured I would post it.

This should coat about 2 breasts cut down into strips depending on how well you coat the chicken.

1 cup bisquik (i am sure any pancake mix that has the levening agent in it should work just fine.)
1/2 cup parmesan cheese grated
1 1/2 tsp paprika
1 tsp salt (you could also use a bit of seasoned salt if you so desire)
3 tbs butter (melted)
1 egg, scrambled for breading

cut the chicken into desired size tenders
combine bisquik, paprika and salt in a ziplock bag
preheat oven to 450
on a cook sheet, spray some pam or non stick spray
dip tender into the egg wash then add to the zip bag, shake until piece is coated then lay on tray.
repeat until all chicken is coated.
drizzle the butter over the chicken tenders
cook for 12-14 minutes, turning the chicken once at the half way mark.

easy enough and was suprisingly flavorful. Plus it cut down on the frying!

you can always flavor it up some more, adding a little bit of hot sauce to the egg wash for some zing.
