Default Buffalo Chicken Wings

Here's my personal take on this all-American classic appetizer. Hope it becomes one of your preferred versions too. Just feel free to adjust the spiciness to suit your palate's sense of adventure.


BUFFALO CHICKEN WINGS

INGREDIENTS:
3 pounds chicken wings (about 15 to 18 pieces)
2 teaspoons paprika
salt and pepper to taste
flour for coating
cooking oil for deep fat frying
1/2 cup butter
1 cup tomato catsup
3 tablespoons light corn syrup
2 to 4 tablespoons Tabasco Chili Sauce (adjust according to spiciness preferred)
2 tablespoons lemon juice
1 tablespoon granulated garlic
1 to 2 teaspoons ground cayenne pepper

Bleu Cheese Dip (recipe follows)
celery stems, cut into 3-inch pieces, soaked in iced water for 1 hour then drained

PROCEDURE:
* Split chicken wings at each joint and discard tips. Season evenly with paprika, salt and pepper. Coat with flour, shaking off excess.
* Fry wings in heated oil until done, about 10 minutes (do not overcook). Drain well from oil then keep warm.
* Melt butter in saucepan. Stir in catsup, corn syrup, Tabasco, lemon juice, granulated garlic and cayenne pepper. Let simmer for 10 minutes.
* Add sauce to wings and toss gently to distribute evenly. (An alternative is to put both wings and sauce in a large plastic container with lid. Cover tightly then shake gently until every wing piece is coated with sauce.)
* Serve with Bleu Cheese Dip and celery sticks.

Makes 30 to 36 pieces.


BLEU CHEESE DIP

INGREDIENTS:
4 ounces bleu cheese, Roquefort or Gorgonzola
2/3 cup mayonnaise
2/3 cup sour cream
2 tablespoons white wine vinegar
1 tablespoon lemon juice
1/2 teaspoon ground white pepper
1/2 to 1 teaspoon Tabasco Chili Sauce

PROCEDURE:
* Mash bleu cheese in bowl, leaving some small lumps.
* Whisk in mayonnaise until blended.
* Add the remaining ingredients and whisk to blend well. Cover and refrigerate until serving time.

Makes about 2 cups dip.

My sincerest apologies! I posted this recipe using my handheld browser - I thought the smiley icon I chose to add was that of a dancing little devil which would have hinted at the spiciness of the dish! It's only now that I noticed my horrid mistake when I read your replies. Pardon my carelessness - being cocky like that especially as a newbie in this forum is farthest from my mind, really.
Geez... talk about getting the wrong kind of attention...
