Default Homemade salsa - missing anything?

So we've got a bunch of stuff on hand, so I whipped up some homemade salsa (my first time). This is what I have:

*Chopped tomatos
*Chopped yellow tomatos
*diced shallots
*diced garlic
*Chopped cilantro
*Lime Zest
*Juice from 1/2 lime


I mixed it up, then strained it so it's not as wet. It's in a metal bowl in the fridge chilling (hopefully not freezing ).

Anything else that you think would be good? I have red & green bell peppers, but not sure how those would be. I also do have 2 mangos...I could add those.

Making it mild, so wife and kids can enjoy it too.

We squeeze our tomatoes before adding them, and have regularly used bell peppers too.
Where's the heat? Mild, sure, but c'mon, thats something an infant could eat. Add a dash or six of Cholula. ;)

Yeah add some heat! A few jalapenos would add some excitement. If you are afraid of the heat, cut open the peppers and remove the seeds and membrane inside. This will make them 1/2 as spicy.

most of the tomatos were squeezed, but I wasn't sure if that was the way to go, so I did a few without...now I know for next time!

Don't have any jalepenos on hand, but if I go to the store tonight, maybe I'll pick some up. Although I do have some green pepper sauce on hand.....

funny.

what's with the shallots? Why not just use a white or yellow (spanish) onion? Red is good too.

I have a red onion on hand, but I'm saving it for bison burgers this weekend. Shallots are nice and tasty...

Just saw in the fridge that I have some scallions on hand. Hmmmm, I think the shallots and garlic will take care of that kind of flavor. But maybe I'll add some anyway. We shall see.

I considered planting jalapenos next year, but I'd be the only one eating them, so it probably wouldn't be worth my effort. Even one plant would be too many.
